The past week has been a whirlwind with a trip out to Denver to see my brother, the start of March Madness (which caused us to break our nearly 3-year stint and install cable! BUT I've already gotten some great ideas for some spring treats from the Food Network, so stay tuned...), and now St. Patty's Day with a big 'Dores game this afternoon and a wedding tonight. As you know, I love all things festive, so I decided today that we needed to be GREEN eaters.

My sister-in-law has gotten me into these healthy smoothies, so I had to share... You can basically throw your favorite fruits and veggies into a blender, but the smoothie of choice today includes:
(measurements not precise), 1 banana, about 1/2 cup frozen blueberries, 1/2 cup strawberries, pineapple, mango (a mix in the frozen fruit section), two handfuls of spinach, a handful of baby carrots, and about a 1/2 cup or so of almond milk.
Blend until it's good and smooth, then add a few cubes of ice to thicken it a bit.
The final product is a little less sweet than a normal fruit smoothie, but you can't taste the spinach at all! I really think you could hide any leafy greens in this blended smoothie and be good to go. Even my husband liked it! (though he drew the line when I asked to upload a picture of him with the smoothie on the blog...) Blend until it's good and smooth, then add a few cubes of ice to thicken it a bit.
