Valentine's Inspires Creativity...

I'm not a huge celebrant of Valentine's Day, BUT I will say that I love all things festive. So, lately, I’ve got sweet treats and greeting cards on my mind...

Last night, I made these "Pretty-in-Pink Strawberry Cupcakes" with homemade strawberry cream cheese icing for a women's event at church:

Before you get too impressed, the icing turned out like strawberry soup -- still not sure if it was the margarine instead of butter, too many mashed strawberries? -- anyway, I ended up at Kroger this afternoon, and the cream cheese store bought stuff mixed with a little of my homemade goo was a perfect combo. A little strawberry garnish and red sprinkles gave the added festive touch I needed. **Tip: the cake part of the recipe is delicious and easy, but I might try a different icing recipe next time.


While the cupcakes were baking, I created a quick and EASY greeting card, and thought I'd pass the idea along…

Buy a pack of blank greeting cards and matching envelopes from your local craft store. Even better if you have a 40% off coupon, so you’ll end up with 50 high quality cards for about $5. Make a copy of a favorite picture, glue/tape it to the front of the card, write a note, and you’ve got a quick and customized card.


We attended a beautiful wedding in Dallas this weekend (reception, coincidentally, was at the same spot as Amy and Matt’s wedding in October). I took a great picture of my in-laws, and the mother of the groom, so I used that photo to write a thank you note to her. Very easy (especially if you have a photo printer!), and more special than a generic card.
